Chocolate.....!
I love chocolate. It is my comfort food and my go to food when I just need that ‘something’.
I have a beautiful chocolate recipe here. Dark, rich and full of nutty goodness.
This one is dairy free.

Ingredients
2 cups of cacao
1 cup coconut oil
1/2-3/4 cup of maple syrup (1/2 will be quite bitter, 3/4 less so)
1 cup of natural almonds
Directions
Heat your oven to 150 degrees Celsius. When hot, place almonds on a tray and toast for 10-15 mins until crunchy. Take out of the oven and leave to cool.
Line a 20cm square pan with baking paper.
Place all the other ingredients in a pot in a low to medium heat and stir until a paste is formed.
Place chocolate paste into the pan and flatten to a standard thickness (around 2 cm) with the back of a spoon. Dot the cooled almonds through the chocolate and then place in the fridge to cool.
When set, break into chunks and enjoy.
Variations: Add 1/2 cup of sultanas or raisins to add more sweetness.
