Quick Recovery Soup...(Vegan)
When you’ve over done it - alcohol or otherwise and want to recover quickly, this is the one for you!
(serves 1)
Ingredients
1/2 knob of ginger (about 2.5 cm) - grated
1/2 clove garlic (minced)
1/2 teaspoon turmeric
1/2 teaspoon of finely chopped parsley
1/2 onion chopped into two
2 stalks celery chopped roughly
1/2-1 tsp of natural chicken stock (choose a vegan option if available)
Oil (any) one teaspoon
1/2 cup or large handful of baby spinach
750ml purified or filtered water
Directions
Heat a medium sized pot and add oil to heat. Gently fry garlic, ginger, turmeric, onion and celery in for around two minutes, then add parsley, water and chicken stock and simmer for half an hour with lid off. Strain to remove everything or pick out just the larger pieces.
Strain over a bowl, add the baby spinach and enjoy your recuperation!
